Are police officers required to give a copy/print out of radar readings showing how much are you speeding over the speed limit?

No
What kind of a man would put a known criminal in charge of a major branch of government? Apart from, say, the average voter.

You can always ask the officer if you can look at the reading, but, as FiReSTaRT indicated, the officer doesn't have to show you anything. Some cops will show you the reading, but that's only happened to me once.
