Agreed. Turn not in safety is a bit misunderstood. When you're turning across traffic, it's your responsibility to only do so when it can be done safely. While there are exemptions for emergency vehicles to travel through red lights, they are still required to come to a complete stop before they can safely proceed though the intersection.
Obviously, this happens very rarely and I think most people are satisfied if they just proceed with caution.

Issue 1 isn't an issue. If there's no sign, the default limit is 50 in built up areas. Flow of traffic doesn't mean anything and doesn't correspond to anything in the Highway Traffic Act. You are either speeding or you are not. That's all they need for a conviction.

Agreed with the others. Blocked view is not a defense. If you can't see without pulling your vehicle into traffic, the next step would be to turn around and take a different route. Although, realistically I don't expect many to do this. However, now you're stuck at fault for the accident.

I'd agree with screeech. They'll take a look at the situation. Doing 190 in an 60 is one thing, 151 in a 100 is another. If you haven't pulled this kind of stunt before, i'd imagine they might drop it to 49 and under. There's no requirement for an officer to show you the device. Suggesting they kept the number on there to charge you would be ignoring the fact that they could just write down any number they want anyways. Officers don't have to prove their case at the side of the road. That's what your trial is for.
