Since this incident occurred in *almost* rush hour in downtown Toronto, I have been told that hopefully I should be able to fight/win it with proper reasoning.

Whomever told you this gave you bad advice. Speeding is what's called an absolute liability offense. What that means is you were either speeding or you weren't. There's NO in between ...

The charges aren't going away. Your goal will be to walk out with the least amount of damage possible knowing full well the charges aren't going to disappear. You'll need to find someone to represent you who will do all the talking.

1. Can she just go ahead and pay the original fine (ie. this option isn't void because we've been and have granted an adjournment to future date) so that they can't increase it to the 130 as clocked/noted in disclosure?

There's nothing unreasonable about having the disclosure request available for pickup at the court house. Sure, it may be unreasonable for you because of your location, but it's not going to be seen as their problem.

This is one of those situations where you're probably better off dealing with the ticket yourself instead of hiring a representative. They aren't going to offer any solutions or do any amount of work that's going to be worth their cost.

There's no where to really go with this ticket ...

For something this serious, get an actual lawyer. Fighting a speeding ticket by yourself is one thing, fighting a stunt driving charge is way more serious and should require professional help.

It's not uncommon for an insurance company to offer first time "ticket forgiveness" on what would normally be considered a minor conviction. It depends on the provider.

I was driving to Windsor from Toronto and set my cruise control's speed to around 120km/h. I was under the impression that you only get tickets when you exceed 120km/h.

My husband was pulled over and accused of using his cell phone. He wasn't and the cop even looked at his call log to see if there were any recent calls, which there weren't. He was still ticketed. What are his options?
