You can always ask the officer if you can look at the reading, but, as FiReSTaRT indicated, the officer doesn't have to show you anything. Some cops will show you the reading, but that's only happened to me once.

I'd recommend taking the plea offer of Drive With No Licence. It is the best charge you could plead to in this case, unfortunately. Yeah, it will impact your insurance, but Driving While Suspended has, in the past, caused insurers to cancel coverage, more than double premiums or resulted in the driver having to get risk facility insurance.

This is a weird ticket. As racer says, file a disclosure request. This should give you the officer's notes, in case he saw something that you didn't. From there, you can work on a defence. Problem with "pleading guilty with an explanation" is that you're still pleading guilty to 40 over. The JP has the option to lower the fine but the big hit is going to be your insurance.

Your insurance will not go up, because this type of offence does not go on your driver record and they don't have access to information on these types of "photographed" charges (photo radar, red light camera). You are being charged as the vehicle owner.

Put together some notes on the situation. I'd be interested to know just how far away the officer took the speed reading and what type of device was used - you can find this out through a disclosure request. It's possible that she got the two cars confused, particularly since the one guy passed you. Depending on whether she was using radar or lidar ...

The ticket will go on your driving record, but you won't get demerit points. The insurance company cares about the record, not the points - as FiReSTaRT indicated. One ticket for 15 over with a clean record otherwise probably won't result in an increase, depending on your provider.
