You usually don't get typed notes on a first request. It's hard to argue you can't read what you haven't seen.
All parties were in the same room when you received your disclosure package. If you needed clarification, it could and would have been provided right then and there. It doesn't take much to know a set of hand written notes aren't legible ...

As far as the window tint, I might suggest one avenue you may want to explore. In 2017, revised motor vehicle safety requirements will come into effect. Most, if not all, of these changes are far more stringent and one of them is gauging the window tint.

I've never heard of anything regarding carrying two insurance cards, as long as you show the correct and valid card.

You are correct. However, when a bus starts spilling out kids and they end up everywhere, you probably wont have much a choice either way.

While the officer may not want to show you the speed listed on his device for safety reasons, it's not the only reason. Another reason is they do not need to prove their case on the side of the road. The road is not a courtroom. If you don't agree with the charge, plead not guilty, make a disclosure request, and get the evidence that way.

Let's just ignore whatever defense you think you have for now. Personally, i'd pay it and run before anyone notices. That and your charge would be amended to the original speed anyways.
