There are a couple reasons in Ontario where an officer can pull you over without cause.
Those can be:
(a) To check your driving related documentation.
(b) inspect the mechanical fitness of your vehicle and/or
(c) to check your sobriety
A sobriety check would, best case scenario, require you to roll down your window.

Speeding is what they call an "absolute liability offense."
In short, this means you were either travelling the speed limit or you weren't. They are not going to consider whether you were driving 110, 120 or 130. There's no in-between here.

You should probably worry about reopening your case as soon as possible. I believe you have 15 days to do so. (Might be 30 but I believe it's 15 for reopening, 30 for appeal)
As far as unreasonable delays go, you did receive your ticket during a global pandemic.

They'll likely already know whether or not the officer will be available by the time you show up. They may make you an offer regardless or choose not to proceed.

Novice Sanctions are automatically applied by the Ministry of Transportation once they receive your conviction. Whomever ends up dealing with your charge, it's out of their hands. Nothing you can really do there. They can only reduce the charge which in turn would come with a lesser penalty.
