Of course you lose nothing except your time by fighting it, but be aware that nothing you have said so far would seem to indicate that you will win.
You say you stopped, the officer says you didn't. In the absence of other witnesses, who will be believed?

That's a bit more complicated process, as I understand it, and there are specific time limits, etc. Depending on your comfort level you might consider retaining some help.

My knowledge on this dates back to the 1990's, so things may have changed. Unless somebody else confirms, take it with a grain of salt.

Wait a few days and then call the appropriate court house to inquire on the status of the ticket. The officer may notice the issue and not file it.

What's the difference paying the ticket on without asking for early resolution or pay after meeting the prosecutor on early resolution? Have I not accepted the charge against me on both cases?
No difference. At the early resolution meeting you might get the prosecutor to agree to a reduced fine.... or not...

One comment to the OP: I believe that your insurance would only consider this "minor" so unless you have other tickets on your record the impact on your premium could be negligible. Check with your provider. You would need to weigh the value of your time to fight it vs. the cost of the ticket.

I can't put my hands on the exact reference right now, but unless things have changed the regulations say that the plate sticker "must" be affixed to the plate, and the expiry sticker "may" be attached to the ownership. This means (again, unless things have changed) that there is no reason for this not to get tossed at a pre-trial meeting. Can you ...

I'm no expert and I'm sure our experts will chime in, but I'm concerned because I think you should have applied for a "re-opening" not an appeal. An appeal can only succeed if there was an error made by the judge / justice during the original trial.
