The radar instructor explained to me that this is because the radar uses Vehicle Interface protocol". He went on to say that VIP means the radar is tied to the cars ECM therefore it doesn't matter what the speedo says.

And for the record...the patrol speed on the radar IS established by the radar unit itslef, not by the cars speedometer or the V.I.P. (portal, not protocol)

It sounds to me like the OP is talking about a defense of necessity? Good luck with that. With regard to accelerating from 40 to 57 maybe the tracking history (if the re is any will corroborate the story, but he'd still be relying on defense of necessity.

Whose witness would he be? If the crown doesn't need/want to use him then the defendant is in a tough spot isn't he?

I also used math to show the impossibility of the speeding ticket I was given. However, my case differs from yours in that I met with the crown before trial and laid out my case, after which the officer changed his story and the charge was dropped so there was never a trial.
