You might want to read your lease agreement very carefully. You may find that you have breached your contract by letting the insurance lapse on the vehicle.

I'm not quite sure about your insurance but most US states have a reciprocal agreement with Ontario to share traffic convictions and reflect them on your licence.

I think you pretty much say it all in your first line. "rolling stop". You either came to a full and complete stop or you didn't. If the wheels of your vehicle are still moving at all, you haven't stopped. Most insurance companies will forgive your first minor offence. My thought is, if they don't ask, don't mention it. Or give them a call (no names) and ask them a "hypothetical" question about it.
